From the 1841 Census (Film HO 107/83 - 2 All those houses... at Manea... west side .. down into Fodderfen and adjacent farms):

Fodderfen House, Manea (James Green, Publican) included amongst others:
Richard Welcher 21 Ag Labourer Born in same county

His age is about right and it is at least possible that this is the same Richard as below. Two other Welchers in Manea at this time on film HO 107/83-3 were both named William. There were no Welchers found at Welches Dam on film 107/84-1

So Richard Welcher and his first cousin John Welcher (born 1814) both had pubs in Benwick Rd in 1861. There were about five pubs in this part of Doddington at this time. Also a Union Workhouse - no Welchers.
